810's have always sounded much better to my ears than 215's. Especially with a 4001 being driven by a tube head.
I personally us a 610 and tube head with my 4001.

I'm running 6x10's and that punch just can't be beat. Some peoples concept of a bass sound is that it should just rumble everything...I prefer the tight punch sound

I like a set up that yields both punch and rumble, coupled witha bass with TONS of growl.

ive seen/heard a lot of people use the svt head 8X10 cab combanation, which sounds amazing, especially with a rickenback! However, i use an old sunn bass amp with a sunn 2X15 and love it, and since my guitar player uses two 4x10 cabs the two contrast each other quite well. it all really depends on what your looking for, an 8x10 sound is more like a giant wall of sound that knocks you off your feet while a 2x15 sound kind of creeps across the floor and jumps up to bit you in the ass... that analogy works for me, take it as you will.

Hey Fish, You cant go wrong with the ampeg 8/10's. I hope you have all the kids you want and you have a strong back, that's the price we pay for that killer sound, no kids and a fused togther lower back. Just KIdding, be sure to wear ear plugs, that ampeg will kick your Axx. LOL Grendel

A 4X10 for growl & punch, & a 15 cab for boom. It's really all you should need. If you're running through the PA then the 4X10 should be lots. All I use is a 4X10 main cab & a 2X10 as a monitor back by the drummer. My signal is run through the board from the balanced line out from the amp. SWR cabs are nice & punchy.

like most in this thread, i too use and love my 8x10. i think they have more versatility and better range than the 2x15, and if you think about having to replace one someday, a 10 is cheaper than a 15. if you're looking for more bottom end, go for the 15's, but i think they get too muddy. you could always rickosound with one of each cab if you have another head.
